My Culinary Philosophy
To me, pastry is a dance between precision and intuition. Once, I replaced butter with avocado in a brownie… disaster or revelation? Against all odds, it became a melt-in-your-mouth success that would make a Michelin-starred chef blush! This taught me that rules are meant to be reimagined—with respect, but without hesitation.
My Unexpected Inspirations
- Nature: A forest walk might birth a hazelnut cake with matcha mousse.
- Art: A Monet painting inspired a pastel-layered entremet reminiscent of Water Lilies.
- Travel: Even without naming countries, I draw from forgotten spices and exotic textures to surprise taste buds.
